For traditionally churned ghee, the story can be followed through milk, curd, churning, butter and ghee.

THE PROCESS

From milk to ghee.

  1. 01Milk. The process begins with milk from the cows selected for the production system.
  2. 02Curd. Milk is cultured into curd before the butter-making stage.
  3. 03Churning. The curd is churned to separate butter from the liquid portion.
  4. 04Butter. The separated butter becomes the starting material for clarification.
  5. 05Ghee. The butter is heated until the water and milk solids separate, leaving clarified butterfat.

What is Bilona ghee?

Bilona ghee generally refers to ghee made through a traditional route in which milk is cultured into curd, the curd is churned to obtain butter, and the butter is then clarified into ghee.

Is Bilona the same as all traditional ghee?

No. The terminology describes a process. A brand should explain its own actual method rather than treating Bilona as a guarantee of every quality attribute.

Why does provenance matter?

Provenance gives the customer a way to understand where a provision starts and how it is made, instead of asking them to rely on packaging language alone.

Can the process be verified?

Production and sourcing documentation should support the claims made for each product. PFS will publish only the level of detail it can responsibly substantiate.
